Ingredients
  

  • 2 whole store-bought flatbreads, 8 to 10 inches
  • 1 1/2 cups cooked shredded chicken rotisserie recommended
  • 1/2 cup BBQ sauce plus 2 tbsp extra for drizzling
  • 1 1/2 cups shredded low-moisture mozzarella
  • 1/4 cup smoked Gouda or sharp cheddar optional
  • 1/2 small red onion, very thinly sliced
  • 1 tbsp olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1 to taste salt and black pepper
  • 3 tbsp fresh cilantro leaves for finishing
  • 1 optional pickled jalapeños, sliced
  • 1 optional lime wedges for serving

Method
 

  1. Preheat oven to 425 degrees F. Place a baking sheet on the center rack to preheat.
  2. Season the chicken: toss shredded chicken with half the BBQ sauce, garlic powder, smoked paprika, salt, and pepper.
  3. Prep the flatbreads: brush both sides of each flatbread lightly with olive oil.
  4. Add toppings: spread remaining BBQ sauce over each flatbread. Top with mozzarella and optional Gouda, then BBQ chicken, then sliced red onion and jalapeños if using.
  5. Bake: slide flatbreads onto the hot baking sheet. Bake 10 to 12 minutes until cheese is melted and bubbly and edges are golden.
  6. Finish and slice: rest 2 minutes, drizzle with extra BBQ sauce, scatter cilantro, and slice. Serve with lime wedges if desired.

Notes

  • Preheat the baking sheet for a crispier base.
  • Use a thin, even layer of BBQ sauce to prevent sogginess.
  • Slice red onion as thin as possible for best texture after baking.
  • Reheat leftovers in the oven or air fryer at 375 degrees F for 5 to 7 minutes.
  • The grilled version works great at medium heat with the lid closed for 6 to 8 minutes.
