Ingredients
  

  • 3 lb beef chuck roast cut into large pieces
  • 3 guajillo chiles stemmed and seeded
  • 2 ancho chiles stemmed and seeded
  • 1 chipotle chile stemmed and seeded
  • 4 cups beef broth
  • 1/4 cup apple cider vinegar
  • 2 tbsp tomato paste

Method
 

  1. Brown the beef in oil.
  2. Toast the chiles and soften the aromatics.
  3. Blend the sauce until smooth and return it to the pot.
  4. Simmer the beef until tender, then shred and serve.

  • Strain the sauce for a smoother broth.
