Method
- Simmer blackberries, sugar, water, and sage in a saucepan for 8 to 10 minutes, pressing the berries gently as they soften.
- Remove from heat, steep 5 minutes, then strain through a fine mesh sieve and cool completely.
- Combine cooled tea, cold water, blackberry sage syrup, and lemon juice in a pitcher and stir well.
- Pour over ice, garnish with sage and blackberries, and serve immediately.
Notes
- Taste the syrup before adding it all, start with half and adjust.
- Use sparkling water instead of still for a fizzy version.
- Syrup keeps refrigerated for up to 2 weeks.
