Ingredients
  

  • 6 Roma tomatoes seeded and finely diced
  • 3 garlic cloves minced
  • 1/4 cup fresh basil thinly sliced
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes optional

Method
 

  1. Dice seeded tomatoes into small, even pieces, about 1 cm.
  2. Combine tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, and pepper in a bowl and stir gently.
  3. Taste and adjust salt or vinegar as needed.
  4. Rest at room temperature for 10 to 15 minutes before serving.
  5. Transfer to a serving bowl, drizzle with extra olive oil, and serve with toasted crostini or bread.

Notes

  • Seed and lightly salt tomatoes first to reduce excess liquid in the dip.
  • Add basil just before serving to keep it bright green and fresh tasting.
  • For the hot version, spread over cream cheese in a baking dish and bake at 190°C for 18 to 20 minutes.
