Ingredients
  

  • 2 cups cooked shredded chicken
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 garlic cloves minced
  • 1 can black beans drained and rinsed
  • 1 cup cooked brown rice
  • 1 cup corn kernels fresh or frozen
  • 1 cup salsa
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup plain Greek yogurt
  • 1 cup shredded cheddar or Mexican blend cheese
  • 2 tbsp chopped cilantro for garnish
  • 1 avocado sliced, for serving

Equipment

  • 9x13 inch baking dish
  • Skillet
  • Mixing bowl

Method
 

  1. Cook onion and garlic in olive oil until softened.
  2. Mix chicken, beans, rice, corn, salsa, seasonings, and yogurt in a bowl.
  3. Spread into a greased 9x13 dish, top with cheese, and bake at 190°C (375°F) for 20 to 25 minutes.
  4. Rest for 5 minutes, then garnish with cilantro and avocado before serving.

Notes

  • Use cooked rice, not uncooked rice.
  • Drain beans well to avoid a watery casserole.
  • Leftovers reheat very well for lunch the next day.
