Ingredients
  

  • 2 cups shredded chicken
  • 1 cup black beans drained
  • 1 cup corn
  • 1 cup Monterey Jack cheese shredded
  • 1/2 cup red bell pepper diced
  • 1/4 cup green onions chopped
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 8 egg roll wrappers

Equipment

  • Mixing bowl

Method
 

  1. Mix all filling ingredients until evenly combined.
  2. Fill each wrapper with mixture and roll tightly.
  3. Cook by frying, baking, or air frying until golden and crisp.

Notes

  • Do not overfill to prevent bursting.
  • Cool filling before wrapping.
