Ingredients
  

  • 1 lb medium shrimp, peeled, deveined, cut into 1-inch pieces
  • 1 1/2 cups jasmine rice or long grain white rice
  • 2 1/4 cups water
  • 1/4 cup fresh cilantro, chopped for rice
  • 2 tbsp fresh lime juice for rice
  • 1 tsp salt divided
  • 2 tbsp olive oil divided
  • 1 1/2 tbsp chipotle adobo or chipotle paste
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1 whole avocado, sliced
  • 1/4 cup sour cream or Greek yogurt
  • 1 tbsp fresh lime juice for crema
  • 1/4 cup fresh cilantro for garnish
  • 1 to taste lime wedges and hot sauce optional

Method
 

  1. Cook rice: combine rice, water, and 1/2 tsp salt. Boil, reduce to low, cover, cook 15 minutes. Rest 5 minutes. Stir in cilantro, lime juice, 1/4 tsp salt.
  2. Season shrimp: toss shrimp with 1 tbsp oil, chipotle, cumin, garlic powder, pepper, 1/4 tsp salt.
  3. Cook shrimp: heat skillet over medium high. Add 1 tbsp oil. Cook shrimp 3 to 4 minutes until opaque and lightly charred.
  4. Warm beans: add black beans to skillet, toss 1 minute.
  5. Assemble: divide rice into bowls. Top with shrimp, beans, tomatoes, onion, avocado.
  6. Make crema: whisk sour cream or yogurt with lime juice and salt.
  7. Serve: drizzle crema, garnish with cilantro. Add lime wedges and hot sauce if desired.

Notes

  • Do not overcook shrimp, 3 to 4 minutes is enough.
  • Keep shrimp cold until cooking.
  • Use a hot skillet for a light char.
  • Store components separately for best texture.
  • Reheat in a skillet with a splash of water.
