Ingredients
  

  • 8 oz Genoa salami, thinly sliced and diced small
  • 8 oz ham, thinly sliced and diced small
  • 6 oz provolone cheese, diced small
  • 1/2 cup banana peppers, drained and diced small
  • 1/4 cup red onion, finely diced
  • 1/4 cup pitted green olives, finely diced
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 large hoagie rolls or Italian rolls
  • 1/4 cup fresh parsley, chopped optional
  • 2 tbsp grated Parmesan optional

Method
 

  1. Chop ingredients: dice salami, ham, provolone, peppers, onion, and olives small and combine in a large bowl.
  2. Make dressing: whisk olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper in a small bowl.
  3. Dress mixture: pour dressing over chopped ingredients. Toss to coat. Add parsley if using.
  4. Drain: spoon mixture into a fine mesh strainer. Let drain 5 minutes to remove excess liquid.
  5. Prep rolls: split hoagie rolls open, press bottom gently to make a pocket.
  6. Fill rolls: press chopped mixture firmly into each roll. Sprinkle Parmesan if using. Wrap tightly 10 minutes.
  7. Serve: cut each sandwich in half and serve.

Notes

  • Dice all ingredients small for consistent texture.
  • Drain the dressed mixture 5 minutes to keep the roll firm.
  • Press filling firmly into the roll so it holds together.
  • Store chopped filling without dressing up to 2 days.
  • Assemble sandwiches just before serving for best texture.
