Ingredients
  

  • 2 packs ramen noodles seasoning packets discarded or reserved separately
  • 1 tbsp butter
  • 1 tsp sesame oil
  • 3 garlic cloves minced
  • 2 cups chicken broth
  • 1 cup whole milk or half and half
  • 1 tbsp soy sauce
  • 1 tsp miso paste optional
  • 1 tsp chili paste or sriracha optional
  • 2 eggs
  • 2 scallions sliced
  • 1 cup sliced mushrooms optional
  • 1 tsp toasted sesame seeds for serving

Equipment

  • Large pot
  • Small saucepan
  • Slotted spoon

Method
 

  1. Soft-boil the eggs, cool, and peel them.
  2. Sauté garlic and mushrooms in butter and sesame oil until fragrant.
  3. Add broth, milk, soy sauce, and miso, then simmer gently.
  4. Cook the ramen noodles in the broth for 2 to 3 minutes until tender, then top with egg, scallions, and sesame seeds.

Notes

  • Keep the broth at a gentle simmer so the milk stays smooth.
  • Cook noodles at the end so they do not absorb too much liquid.
  • Store broth and noodles separately for the best leftovers.
