Ingredients
  

  • 2 medium apples peeled, cored, and diced
  • 1.5 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 large eggs room temperature
  • 1/2 cup neutral oil vegetable or sunflower
  • 1/3 cup plain yogurt or sour cream
  • 1.5 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp brown sugar for topping
  • 1/2 tsp cinnamon extra, for topping

Method
 

  1. Preheat oven to 175°C (350°F) and grease a 9-inch baking pan.
  2. Whisk eggs, oil, yogurt, sugar, and vanilla in a large bowl until smooth.
  3. Add flour, cinnamon, baking powder, baking soda, and salt. Stir until just combined.
  4. Fold in the diced apples gently.
  5. Pour batter into the prepared pan and spread evenly.
  6. Sprinkle the combined brown sugar and cinnamon over the top.
  7. Bake for 35 to 40 minutes until a toothpick comes out clean. Cool for 15 minutes before slicing.

Notes

  • Use firm apples like Granny Smith or Honeycrisp for best texture.
  • Do not overmix the batter once flour is added.
  • Tastes even better on day two as the moisture settles.
