Preheat your oven to 400°F and line a baking sheet with parchment paper.
Cut each potato lengthwise into 8 wedges, keeping them roughly the same size. Pat dry with a kitchen towel.
Toss the wedges in a large bowl with olive oil until well coated.
Mix salt, garlic powder, and Italian seasoning in a small bowl. Sprinkle over potatoes along with half the parmesan and toss to coat.
Arrange wedges in a single layer on the baking sheet, cut side down. Bake for 30 to 35 minutes, flipping halfway through, until golden brown and crispy.
Remove from oven, sprinkle remaining parmesan on top, and garnish with fresh parsley if desired. Serve immediately.
