Ingredients
  

  • 6 cups day-old bread cut into 1-inch cubes
  • 3 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 3/4 cup granulated sugar
  • 2 tbsp unsalted butter melted
  • 1.5 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup raisins optional
  • 1/2 cup unsalted butter for vanilla sauce
  • 1 cup powdered sugar sifted, for vanilla sauce
  • 1 large egg beaten, for vanilla sauce
  • 2 tsp vanilla extract for vanilla sauce
  • 2 tbsp heavy cream for vanilla sauce

Method
 

  1. Soak bread cubes in the egg, milk, cream, sugar, butter, and spice custard mixture for at least 30 minutes in a buttered 9x13 dish.
  2. Bake uncovered at 175°C (350°F) for 45 to 55 minutes until golden and just set in the center.
  3. Make the vanilla sauce by melting butter, whisking in powdered sugar, stirring in the beaten egg over low heat, then finishing with vanilla and cream.
  4. Rest the pudding 10 minutes, then pour warm vanilla sauce over each serving.

Notes

  • Use stale or oven-dried bread for the best custard absorption.
  • Stir the vanilla sauce constantly once the egg is added to prevent scrambling.
  • Cover with foil if the top browns before the center sets.
