Ingredients
  

  • 2 boneless skinless chicken breasts about 450 g total
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 sandwich buns split and toasted
  • 4 lettuce leaves
  • 1 large tomato sliced
  • 4 slices cheese optional
  • 2 tbsp mayonnaise or sandwich spread
  • 1 tbsp Dijon mustard optional
  • 1 pickles or red onion optional

Method
 

  1. Mix olive oil, lemon juice, garlic powder, onion powder, paprika, salt, and pepper in a bowl, then coat the chicken and marinate 15 to 30 minutes.
  2. Heat a grill pan or skillet over medium-high heat and cook chicken for 5 to 6 minutes per side until the internal temperature reaches 74°C. Add cheese during the last minute if using.
  3. Rest the chicken for 5 minutes, then slice it.
  4. Toast buns and spread with mayonnaise or mustard.
  5. Assemble with lettuce, sliced chicken, tomato, and optional pickles or onion, then serve right away.

Notes

  • Toast the buns so they hold up better to the juices and toppings.
  • Let the chicken rest before slicing to keep it juicy.
  • Store cooked chicken separately from the bread for the best leftovers.
