Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 4 slices bacon cooked until crisp and chopped
  • 1 cup Monterey Jack cheese shredded
  • 1/2 cup cheddar cheese shredded
  • 1/3 cup barbecue sauce
  • 2 green onions sliced
  • 1 tbsp parsley chopped, optional

Method
 

  1. Preheat grill to medium-high and brush chicken with oil, salt, pepper, garlic powder, and paprika.
  2. Grill chicken for 5 to 7 minutes per side until it reaches 74°C.
  3. Add barbecue sauce, cheeses, and chopped bacon during the last minute, then close the lid to melt the cheese.
  4. Rest the chicken for 5 minutes, then garnish with green onions and parsley before serving.

  • Let the chicken rest so the juices stay inside the meat.
