Ingredients
  

  • 4 boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 2 garlic cloves minced
  • 1 lemon zested and juiced
  • 1 tbsp fresh dill chopped, plus more for garnish
  • 1 tsp dried oregano
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper
  • 2 cups chopped romaine or mixed greens
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/3 cup kalamata olives
  • 1/3 cup crumbled feta cheese
  • 1/4 red onion thinly sliced
  • 1/2 cup plain Greek yogurt for sauce
  • 1 tbsp olive oil for sauce
  • 1 tbsp lemon juice for sauce
  • 1 tbsp fresh dill chopped, for sauce
  • 1 small garlic clove grated, for sauce

Equipment

Method
 

  1. Marinate chicken in olive oil, garlic, lemon, dill, oregano, salt, and pepper for at least 30 minutes.
  2. Cook chicken on a hot grill pan for 5 to 6 minutes per side until golden and cooked through, then rest and slice.
  3. Whisk together yogurt, olive oil, lemon juice, dill, and garlic for the sauce.
  4. Assemble bowls with greens, tomatoes, cucumber, olives, feta, and red onion.
  5. Top each bowl with sliced chicken and a spoonful of lemon dill sauce.

Notes

  • Pound chicken to an even thickness for consistent cooking.
  • Let chicken rest before slicing to keep it juicy.
