Ingredients
  

  • 1 1/2 lb boneless, skinless chicken breasts
  • 3 tbsp olive oil
  • 3 tbsp fresh lime juice
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 ripe mangoes, peeled and diced
  • 1/2 small red bell pepper, finely diced
  • 1/4 small red onion, finely diced
  • 1 small jalapeño, seeded and minced
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp fresh lime juice for the salsa
  • 1 pinch salt for the salsa

Method
 

  1. Marinate the chicken: whisk olive oil, lime juice, honey, garlic, chili powder, salt, and pepper. Add chicken and coat well. Marinate 20 minutes to 4 hours.
  2. Make the salsa: combine mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Stir gently and set aside.
  3. Cook the chicken: grill or sear over medium heat for 5 to 7 minutes per side, until browned and cooked through to 165 degrees F.
  4. Rest and slice: transfer chicken to a cutting board and rest 5 minutes, then slice.
  5. Serve: spoon mango salsa over the chicken and serve with rice, greens, or warm tortillas.

Notes

  • Marinating even 20 minutes makes a noticeable difference.
  • Use ripe but firm mango for the best salsa texture.
  • Cook chicken to 165 degrees F, then rest before slicing so it stays juicy.
  • Store chicken and salsa separately for up to 4 days and 2 days respectively.
  • For grilling, keep the heat at medium so the honey in the marinade does not burn.
