Ingredients
  

  • 1 cup old-fashioned rolled oats Use certified gluten-free if needed
  • 1/2 cup creamy peanut butter Stirred well
  • 1/3 cup honey Can substitute with maple syrup
  • 1/4 cup mini chocolate chips
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1/4 tsp kosher salt

Method
 

  1. Mix the rolled oats, chia seeds, and kosher salt in a large mixing bowl.
  2. Add the creamy peanut butter, honey, and vanilla extract. Stir well until a sticky dough forms.
  3. Fold in the mini chocolate chips gently.
  4. Chill the bowl in the refrigerator for 30 minutes to firm up the dough.
  5. Scoop and roll the dough into 12 equal-sized balls using your hands.

Notes

  • Store in an airtight container in the refrigerator for up to one week.
  • If the dough is too dry, add a tablespoon of extra peanut butter or water.
