Ingredients
  

  • 2 large sweet potatoes peeled
  • 2 tbsp olive oil
  • 1 tbsp cornstarch
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper optional
  • fresh parsley chopped, for garnish

Method
 

  1. Cut sweet potatoes into even 1/4 inch fries and soak in cold water for 20 to 30 minutes, then dry thoroughly.
  2. Toss fries with olive oil, cornstarch, and seasonings until evenly coated.
  3. Spread in a single layer on parchment-lined baking sheets, leaving space between pieces.
  4. Bake at 220°C (425°F) for 15 minutes, flip, then bake another 12 to 15 minutes until crisp.
  5. Garnish with fresh parsley and serve immediately.

Notes

  • Do not overcrowd the baking sheet, use two trays if needed.
  • Pat fries completely dry after soaking for the best crisp.
  • Flip halfway through baking for even browning.
