Ingredients
  

  • 4 pork chops bone-in or boneless, about 1 inch thick
  • 1 cup Parmesan cheese freshly grated
  • 1/2 cup panko breadcrumbs
  • 1 large egg
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp dried Italian seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp butter for finishing

Method
 

  1. Preheat oven to 200°C (400°F).
  2. Mix Parmesan, panko, garlic powder, paprika, Italian seasoning, salt, and pepper in a shallow dish.
  3. Whisk the egg in a separate bowl.
  4. Dip each dry pork chop into the egg, then press firmly into the Parmesan coating on both sides.
  5. Heat olive oil in an oven-safe skillet over medium-high heat, then sear chops for 3 minutes per side without moving them.
  6. Add butter to the pan, then transfer skillet to the oven and bake for 10 to 12 minutes until internal temperature reaches 63°C (145°F).
  7. Rest chops for 5 minutes before serving.

Notes

  • Always pat pork chops dry before coating for best crust adhesion.
  • Use freshly grated Parmesan, not powdered, for superior texture.
  • Do not crowd the pan during searing or the crust will steam instead of crisp.
