Ingredients
  

  • 4 bell peppers medium, any color
  • 1.5 cups ricotta cheese whole milk
  • 0.5 cup mozzarella cheese shredded
  • 0.25 cup Parmesan cheese grated
  • 1 onion finely diced
  • 2 cloves garlic minced
  • 0.25 cup parsley fresh, chopped
  • 1 tsp oregano dried
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 200°C and prepare peppers by removing seeds and tops.
  2. Mix ricotta, cheeses, onion, garlic, herbs, salt, and pepper in a bowl.
  3. Stuff peppers with filling and bake for 35 to 40 minutes until tender.

Notes

  • Add water to baking dish for steam.
  • Use whole milk ricotta for best texture.
