Ingredients
  

  • 1 pound fresh salmon fillets, skin removed and finely chopped
  • 0.5 cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil for brushing
  • 1 large ripe avocado for the sauce
  • 0.25 cup plain Greek yogurt for the sauce
  • 1 tablespoon lime juice for the sauce
  • 1 clove garlic, minced for the sauce

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.
  2. Mix the chopped salmon, breadcrumbs, egg, dill, lemon juice, garlic powder, salt, and pepper in a bowl until just combined.
  3. Roll the mixture into 2-tablespoon sized spheres and place them on the baking sheet.
  4. Brush the tops lightly with olive oil.
  5. Bake for 12 to 15 minutes until golden and cooked through.
  6. Blend the avocado, Greek yogurt, lime juice, and minced garlic in a food processor until smooth to make the dip.
  7. Serve the warm bites immediately alongside the fresh chilled dip.

Notes

  • Do not overmix the fish to keep the texture light and flaky.
  • Store leftovers in an airtight container in the fridge for up to three days.
