Ingredients
  

  • 1 pound flank steak sliced thinly against the grain
  • 2 large bell peppers cut into thick strips
  • 1 large white onion sliced into wedges
  • 3 tbsp soy sauce low sodium preferred
  • 1 tbsp oyster sauce
  • 1 tbsp cornstarch
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 0.5 cup beef broth
  • 2 tbsp vegetable oil divided for frying

Method
 

  1. Mix the sauce: Whisk the soy sauce, oyster sauce, beef broth, and cornstarch in a small bowl until completely smooth.
  2. Sear the beef: Heat one tablespoon of oil in a large skillet over medium-high heat until shimmering. Add the thinly sliced beef in a single layer, sear for two minutes per side, then remove from the pan.
  3. Cook aromatics: Add the remaining oil to the skillet, tossing in the garlic and ginger for thirty seconds until fragrant.
  4. Sauté vegetables: Stir in the onions and peppers, cooking for three to four minutes until they are bright but still crisp.
  5. Combine and thicken: Return the beef to the skillet, pour the prepared sauce over the top, and let it bubble and thicken for one minute before serving.

Notes

  • Slice the beef against the grain to ensure tenderness.
  • Make sure the skillet is very hot before adding the beef so it sears instead of steaming.
