Ingredients
  

  • 1.2 kg boneless skinless chicken breasts or thighs
  • 2 cups corn kernels frozen or canned, drained
  • 225 g cream cheese cubed, room temperature
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1 can diced green chiles 400 g
  • 3 garlic cloves minced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lime juiced
  • 1/3 cup cotija cheese crumbled, for topping
  • 1 handful fresh cilantro for serving

Equipment

  • 5 to 6 quart slow cooker
  • Two Forks for Shredding

Method
 

  1. Place chicken in the slow cooker and add corn, green chiles, garlic, broth, and all spices. Lay cream cheese cubes on top.
  2. Cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours.
  3. Remove chicken, shred with two forks on a cutting board, then return to the slow cooker.
  4. Stir in sour cream and lime juice until the sauce is smooth and fully combined.
  5. Taste and adjust seasoning, then serve topped with cotija cheese, cilantro, and extra lime.

Notes

  • Use room temperature cream cheese for a smoother sauce.
  • Do not open the lid during cooking to maintain temperature.
