Ingredients
  

  • 2 pounds Yukon Gold potatoes peeled and chopped
  • 1 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup celery chopped
  • 0.25 cup red onion chopped
  • 2 hard-boiled eggs chopped
  • 2 tbsp parsley chopped

Method
 

  1. Boil potatoes in salted water until fork tender, then drain.
  2. Mix mayonnaise, mustard, vinegar, salt, and pepper in a bowl.
  3. Combine warm potatoes with dressing and fold gently.
  4. Add celery, onion, eggs, and parsley, then mix lightly.
  5. Chill for at least 1 hour before serving.
