Ingredients
  

  • 1 lb refrigerated cheese tortellini
  • 6 slices bacon, chopped
  • 3 large eggs
  • 1 cup freshly grated parmesan cheese
  • 1/2 tsp black pepper, plus more for serving
  • 1/4 tsp salt, or to taste
  • 2 tbsp chopped parsley optional
  • 1 tbsp butter optional
  • 1/2 cup reserved pasta water as needed

Method
 

  1. Cook tortellini: boil salted water, cook tortellini until just tender, and reserve at least 1/2 cup pasta water before draining.
  2. Cook bacon: crisp bacon in a large skillet over medium heat. Transfer bacon to a paper towel-lined plate and leave about 2 tablespoons fat in the pan.
  3. Make sauce: whisk eggs, parmesan, black pepper, and salt in a bowl until smooth.
  4. Combine: add hot tortellini to the warm skillet. Remove from heat and stir in the egg mixture quickly.
  5. Loosen: add reserved pasta water, a tablespoon at a time, until the sauce is glossy and creamy.
  6. Finish: stir in bacon and parsley if using. Serve immediately with extra parmesan and black pepper.

Notes

  • Use freshly grated parmesan for the smoothest sauce.
  • Remove the skillet from heat before adding the eggs.
  • Add pasta water slowly to avoid thinning the sauce too much.
  • Reheat leftovers gently with a splash of water or milk.
